Delicious and nutritious, baby spinach leaves are an essential part of mesclun greens. Young leaves are ready to harvest 25 to 30 days from sowing seeds and, depending on the variety, may be smooth to crinkly. This is a cold-hardy green with cupped, spoon-shaped leaves that look a lot like spinach. Be sure to sow in your zone with enough time for the seeds to germinate and for the plants to grow to a few inches before the average first frost date in your area. You may come across a four- or six-inch container of young mesclun seedlings for sale at a farmers market or local nursery, to transplant into the garden or a container.
